Ingredient Quantity
Callaloo leaves 2 cups
Onion 1 medium, diced
Ginger 1 tablespoon, grated
Garlic 4 cloves, minced
Carrots 2 medium, diced
Potatoes 2 medium, diced
Coconut milk 1 can (400ml)
Vegetable broth 4 cups
Thyme 1 tablespoon
Salt 1 teaspoon
Black pepper 1/2 teaspoon

Cooking Instructions:

  • Step 1: In a large pot, heat some oil over medium heat. Add the diced onion, grated ginger, and minced garlic. Sauté until the onion becomes translucent and the ginger and garlic release their aroma.
  • Step 2: Add the diced carrots and potatoes to the pot and cook for about 5 minutes, stirring occasionally. This will help to soften the vegetables and enhance their flavor.
  • Step 3: Pour in the vegetable broth and bring it to a boil. Reduce the heat to low and let it simmer for about 15-20 minutes, or until the carrots and potatoes are tender.
  • Step 4: Add the callaloo leaves to the pot and continue to simmer for an additional 5 minutes. The leaves will wilt and blend into the soup, adding their unique flavor and nutrients.
  • Step 5: Stir in the coconut milk, thyme, salt, and black pepper. Allow the soup to simmer for another 5 minutes to let the flavors meld together.
  • Step 6: Remove the pot from the heat and let the soup cool slightly. Using an immersion blender or a regular blender, blend the soup until smooth and creamy.
  • Step 7: Return the pot to the heat and warm the soup for a few more minutes. Taste and adjust the seasoning if needed.
  • Step 8: Serve the callaloo soup hot and garnish with some fresh thyme leaves. Enjoy!
