Fish Moqueca

Ingredients:

Ingredient Quantity
Fish fillets 500g
Coconut milk 400ml
Diced tomatoes 1 cup
Onion, thinly sliced 1 medium
Garlic, minced 3 cloves
Red bell pepper, thinly sliced 1 medium
Fresh cilantro, chopped 1/4 cup
Lime juice 2 tablespoons
Salt to taste

Cooking Instructions:

  • Step 1: In a large pot, heat some oil over medium heat. Add the onions, garlic, and bell pepper. Sauté until softened.
  • Step 2: Add the diced tomatoes and cook for a few minutes until they start to break down. Then add the coconut milk and bring to a simmer.
  • Step 3: Season the fish fillets with salt and lime juice. Gently place the fish fillets into the pot and cook for about 10 minutes, or until the fish is cooked through and flakes easily with a fork.
  • Step 4: Serve the fish moqueca over steamed rice and garnish with fresh cilantro. Enjoy!
