Galangal 4 slices
Kaffir Lime Leaves 4 leaves
Fish Sauce 2 tablespoons
Lime Juice 2 tablespoons
Thai Chili Peppers 2 peppers
Cilantro Handful
Spring Onions 2 sprigs
Sugar 1 teaspoon

Cooking Instructions:

  • Step 1: In a pot, bring the coconut milk to a gentle boil. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
  • Step 2: Add chicken, fish sauce, and sugar to the pot. Cook until chicken is fully cooked, about 10 minutes.
  • Step 3: Remove the lemongrass, galangal, and kaffir lime leaves from the pot. Stir in lime juice, Thai chili peppers, cilantro, and spring onions. Serve hot.
