Ingredients:

Rice Noodles 200g
Shrimp 150g
Tofu 150g
Eggs 2
Bean Sprouts 100g

Cooking Instructions:

  • Step 1: Soak the rice noodles in cold water for about 30 minutes until they are softened. Drain and set aside.
  • Step 2: Heat a pan or wok over medium heat and add a tablespoon of oil. Stir-fry the shrimp until they turn pink and are cooked through. Remove the shrimp from the pan and set aside.
  • Step 3: In the same pan, add another tablespoon of oil and fry the tofu until it is golden brown and crispy. Remove from the pan and set aside.
  • Step 4: Beat the eggs in a bowl and season with salt. Heat the remaining oil in the pan and pour in the beaten eggs. Scramble the eggs until they are cooked through. Remove from the pan and set aside.
  • Step 5: In the same pan, add the drained rice noodles and cook until they are softened and heated through. Add the tamarind paste, fish sauce, and sugar to the noodles. Stir-fry for a couple of minutes until the noodles are well coated in the sauce.
  • Step 6: Return the cooked shrimp, tofu, and scrambled eggs to the pan. Add the bean sprouts and stir-fry for another minute until everything is well combined and heated through.
  • Step 7: Serve your Pad Thai hot, garnished with chopped peanuts, fresh lime wedges, and a sprinkle of chopped cilantro. Enjoy!
