Ingredients:

Tomatoes 4 large
Cucumber 1
Red Bell Pepper 1
Red Onion 1/2
Garlic Clove 1
Extra Virgin Olive Oil 3 tbsp
Red Wine Vinegar 2 tbsp
Salt to taste
Black Pepper to taste

Cooking Instructions:

  • Step 1: Wash and dice the tomatoes, cucumber, red bell pepper, and red onion. Peel and finely chop the garlic clove.
  • Step 2: In a blender or food processor, add the diced tomatoes, cucumber, red bell pepper, red onion, and garlic clove. Blend until smooth.
  • Step 3: Pour the blended mixture into a large bowl. Stir in the extra virgin olive oil and red wine vinegar. Season with salt and black pepper to taste.
  • Step 4: Cover the bowl with plastic wrap or a lid and refrigerate for at least 2 hours to allow the flavors to meld together.
  • Step 5: Serve the gazpacho chilled. You can garnish it with additional diced vegetables or fresh herbs. Enjoy!
