Ingredients:

Ingredient Quantity
Green Papaya 1 medium
Carrots 2 medium
Cherry Tomatoes 1 cup
Green Beans 1 cup
Peanuts 1/4 cup
Cilantro 1/4 cup
Mint 1/4 cup
Lime juice 2 tablespoons
Fish sauce 2 tablespoons
Sugar 1 tablespoon
Thai chilies 2
Garlic 2 cloves

Cooking Instructions:

  • Step 1: Peel and shred the green papaya and carrots. Slice the cherry tomatoes in half and trim the ends of the green beans. Set aside.
  • Step 2: In a mortar and pestle, pound the Thai chilies and garlic into a paste. Add the sugar, fish sauce, and lime juice and mix well.
  • Step 3: In a large bowl, combine the shredded green papaya, carrots, cherry tomatoes, green beans, cilantro, and mint. Pour the dressing over the salad and toss well to combine.
  • Step 4: Garnish the salad with crushed peanuts. Serve immediately and enjoy!
