Cooking Instructions:

  • Step 2: Heat oil in a skillet over medium heat. Pour the tomato mixture into the skillet and simmer for 10 minutes, until the sauce thickens slightly.
  • Step 3: In a separate skillet, heat oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still slightly runny.
  • Step 4: Warm the tortillas in a dry skillet or in the oven.
  • Step 5: To serve, place a tortilla on a plate and top with a fried egg. Spoon the tomato sauce over the egg. Garnish with chopped cilantro.
