About the Dish:
Bánh Xèo is a Vietnamese savory pancake with a crispy, crepe-like texture. It is typically filled with a variety of ingredients such as pork, shrimp, bean sprouts, and green onions. The pancake is traditionally served with fresh lettuce, aromatic herbs, and a dipping sauce, creating a refreshing and satisfying dish.
|Rice Flour||1 cup|
|Coconut Milk||1 cup|
|Turmeric Powder||1/2 teaspoon|
|Bean Sprouts||1 cup|
|Green Onion||1/4 cup|
|Aromatic Herbs (Mint, Basil, Cilantro)||For serving|
|Dipping Sauce||For serving|
- Step 1: In a mixing bowl, combine the rice flour, coconut milk, turmeric powder, and water. Whisk until you have a smooth batter. Let it rest for 30 minutes.
- Step 2: Heat a non-stick pan over medium heat. Add a little oil and swirl to coat the pan. Pour a ladleful of the batter into the pan and immediately tilt the pan to spread the batter thinly and evenly. Cook for a few minutes until the edges start to crisp up.
- Step 3: Spread some pork, shrimp, bean sprouts, and green onions on one half of the pancake. Cover the pan and cook for another 2-3 minutes, until the fillings are cooked and the pancake is crispy.
- Step 4: Fold the pancake in half to cover the fillings. Slide it onto a plate and serve with fresh lettuce, aromatic herbs, and dipping sauce.
