Step 1:

  • Bring the soup to a boil, then reduce heat to low and let it simmer for 15-20 minutes.
  • Use a handheld immersion blender or transfer the soup to a blender to puree until smooth.

Step 5:

  • Return the soup to the pot, place it back on the stove over low heat.
  • Stir in heavy cream and let it heat through for a few minutes.

Step 6:

  • Remove from heat and ladle the tomato soup into bowls.
  • Garnish with fresh basil leaves and a drizzle of olive oil.
