Mercimek Köftesi is a traditional Turkish dish made primarily from red lentils, bulgur wheat, and various herbs and spices. It is a vegetarian dish, popular during parties and gatherings. Ingredients:

Ingredient Quantity
Red Lentils 1 cup
Bulgur Wheat 1 cup
Onion 1 medium, finely chopped
Parsley 1/2 cup, finely chopped
Mint 1/4 cup, finely chopped
Tomato Paste 2 tablespoons
Red Pepper Flakes 1 teaspoon
Lemon Juice 2 tablespoons
Olive Oil 2 tablespoons
Salt 1 teaspoon

Cooking Instructions:

  • Step 1: Rinse the red lentils thoroughly and cook them in a pot with 2 cups of water until they are soft and mushy. Drain any excess water and let them cool.
  • Step 2: In a large bowl, combine the cooked lentils, bulgur wheat, chopped onion, parsley, mint, tomato paste, red pepper flakes, lemon juice, olive oil, and salt. Mix well until all the ingredients are evenly combined.
  • Step 3: Using your hands, shape the mixture into small patties or balls. Place them on a serving platter or plate, cover them with plastic wrap, and refrigerate for at least 1 hour to allow them to firm up.
  • Step 4: Serve the Mercimek Köftesi chilled as an appetizer or as a main course with a side of salad and some bread. Enjoy!
