Cooking Instructions:
Step 1: In a large skillet, cook the ground beef over medium heat until browned. Add the chopped onion and minced garlic and cook until the onion is softened. Drain any excess fat from the skillet.
Step 2: Stir in the diced tomatoes, tomato paste, red wine, dried oregano, salt, and pepper. Simmer the sauce for about 20 minutes, until it thickens slightly.
Step 3: Meanwhile, cook the penne pasta according to the package instructions. Drain the pasta and set it aside.
Step 4: In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 2 minutes, until the mixture is smooth and bubbly.
Step 5: Gradually whisk in the milk and cook, stirring constantly, until the sauce thickens. Remove from heat and stir in the grated Parmesan cheese until melted.
Step 6: In a small bowl, beat the eggs. Gradually whisk in about 1 cup of the hot milk mixture to temper the eggs. Return the tempered egg mixture to the saucepan and whisk until well combined.
Step 7: Preheat the oven to 350°F (175°C). Grease a baking dish.
Step 8: In the greased baking dish, layer half of the cooked penne pasta. Top with half of the meat sauce, spreading it evenly. Repeat the layers with the remaining penne pasta and meat sauce.
Step 9: Pour the bechamel sauce over the top of the dish, spreading it evenly to cover the meat sauce completely.
Step 10: Bake in the preheated oven for about 45 minutes, until the top is golden and bubbling. Let it cool for a few minutes before serving.
