Ingredients:

Rice 2 cups
Tomatoes 4
Onion 1
Vegetable Oil 2 tablespoons
Garlic 4 cloves
Ginger 1 inch
Scotch Bonnet Pepper 1
Chicken Stock 2 cups
Salt to taste

Cooking Instructions:

  • Step 1: Rinse the rice thoroughly and set aside.
  • Step 2: In a blender, blend the tomatoes, onion, garlic, ginger, and scotch bonnet pepper until smooth.
  • Step 3: Heat the vegetable oil in a large pot over medium heat. Add the blended tomato mixture and cook for about 10 minutes, stirring occasionally.
  • Step 4: Add the chicken stock, salt, black pepper, and paprika to the pot. Stir well to combine.
  • Step 5: Add the rice to the pot and stir to coat it with the tomato mixture. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes or until the rice is cooked and tender.
  • Step 6: Fluff the rice with a fork and serve hot.
