Spicy Lamb Tagine is a rich and flavorful Moroccan dish made with tender lamb, aromatic spices, and a touch of heat. It is traditionally cooked in a tagine pot, which helps to infuse all the flavors and create a tender and succulent meat. Ingredients:

Ingredient Quantity
Lamb shoulder, cubed 2 lbs
Onion, chopped 1
Garlic cloves, minced 4
Ginger, grated 2 tsp
Paprika 2 tsp
Cumin 1 tsp
Cayenne pepper 1/2 tsp
Cinnamon 1/2 tsp
Saffron threads 1/4 tsp
Tomatoes, diced 1 can (14 oz)
Chicken broth 1 cup
Prunes 1 cup
Honey 2 tbsp
Olives 1/2 cup
Cilantro, chopped 1/4 cup
Salt To taste
Black pepper To taste

Cooking Instructions:

  • Step 1: In a large tagine pot or a heavy-bottomed pot, heat some oil over medium heat. Add the lamb cubes and cook until browned on all sides. Remove from the pot and set aside.
  • Step 2: In the same pot, add the chopped onion and sauté until softened. Add the minced garlic, grated ginger, paprika, cumin, cayenne pepper, and cinnamon. Cook for a couple of minutes until fragrant.
  • Step 3: Return the browned lamb cubes to the pot. Add the saffron threads, diced tomatoes, and chicken broth. Season with salt and black pepper. Stir well to combine.
  • Step 4: Cover the pot and reduce the heat to low. Let the tagine simmer for about 2 hours, or until the lamb is tender and the flavors have melded together.
  • Step 5: Add the prunes, honey, and olives to the pot. Stir gently to incorporate. Continue simmering for another 30 minutes.
  • Step 6: Taste and adjust the seasoning if necessary. Sprinkle the chopped cilantro over the tagine before serving.
  • Step 7: Serve the Spicy Lamb Tagine hot with couscous or crusty bread. Enjoy!
