Enchiladas are a delicious Mexican dish made with tortillas filled with various ingredients, then covered in sauce and baked or fried. - Step 1: Preheat your oven to 350°F (175°C). In a large baking dish, spread a thin layer of enchilada sauce.
- Step 2: In a separate bowl, mix together the cooked and shredded chicken, black beans, and half of the shredded cheddar cheese. Take a tortilla and spoon a generous amount of the chicken and bean mixture onto the center. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
- Step 3: Pour the remaining enchilada sauce over the rolled tortillas, making sure they are fully covered. Sprinkle the rest of the shredded cheddar cheese on top.
- Step 4: Bake the enchiladas in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Serve hot with rice, beans, and guacamole.
