Enchiladas are a delicious Mexican dish made with tortillas filled with various ingredients, then covered in sauce and baked or fried. Enchiladas are perfect for family dinners or entertaining guests and can be served with rice, beans, and a side of guacamole.

Ingredient Quantity
Tortillas 8
Chicken (cooked and shredded) 2 cups
Black Beans (canned and drained) 1 cup
Cheddar Cheese (shredded) 1 cup
Enchilada Sauce 2 cups

Cooking Instructions:

  • Step 1: Preheat your oven to 350°F (175°C). In a large baking dish, spread a thin layer of enchilada sauce.
  • Step 2: In a separate bowl, mix together the cooked and shredded chicken, black beans, and half of the shredded cheddar cheese. Take a tortilla and spoon a generous amount of the chicken and bean mixture onto the center. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat with the remaining tortillas.
  • Step 3: Pour the remaining enchilada sauce over the rolled tortillas, making sure they are fully covered. Sprinkle the rest of the shredded cheddar cheese on top.
  • Step 4: Bake the enchiladas in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly. Serve hot with rice, beans, and guacamole.
