- Step 1: Preheat your oven to 350 degrees Fahrenheit. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and diced green pepper, and cook until they are softened, about 5 minutes. Add the shredded chicken to the skillet and season with salt and black pepper. Cook for an additional 2-3 minutes, stirring occasionally, until the chicken is heated through.
- Step 2: Warm the tortillas in the microwave for about 30 seconds or until they are pliable. Divide the chicken mixture evenly among the tortillas, placing it in a line down the center of each tortilla. Sprinkle shredded cheddar cheese over the chicken mixture in each tortilla. Roll up the tortillas and place them seam-side down in a baking dish.
- Step 3: Pour the red enchilada sauce over the rolled tortillas, making sure they are evenly coated. Sprinkle additional shredded cheese over the top of the enchiladas.
