Ingredients:

Tortillas 8
Chicken breast 2 cups, cooked and shredded
Cheddar cheese 2 cups, shredded
Onion 1, finely chopped
Green pepper 1, diced
Red enchilada sauce 2 cups
Vegetable oil 2 tablespoons
Salt 1 teaspoon
Black pepper 1/2 teaspoon

Cooking Instructions:

  • Step 1: Preheat your oven to 350 degrees Fahrenheit. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and diced green pepper, and cook until they are softened, about 5 minutes. Add the shredded chicken to the skillet and season with salt and black pepper. Cook for an additional 2-3 minutes, stirring occasionally, until the chicken is heated through.
  • Step 2: Warm the tortillas in the microwave for about 30 seconds or until they are pliable. Divide the chicken mixture evenly among the tortillas, placing it in a line down the center of each tortilla. Sprinkle shredded cheddar cheese over the chicken mixture in each tortilla. Roll up the tortillas and place them seam-side down in a baking dish.
  • Step 3: Pour the red enchilada sauce over the rolled tortillas, making sure they are evenly coated. Sprinkle additional shredded cheese over the top of the enchiladas. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly. Serve hot and enjoy!
