Potato skins are a popular appetizer that are made from the skins of baked potatoes. |Cheddar cheese, shredded||1 cup|

- Step 1: Preheat the oven to 400°F. Scrub the potatoes clean and prick them all over with a fork. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the potatoes are tender when pierced with a fork.
- Step 2: Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise. Scoop out most of the flesh, leaving a thin layer of potato attached to the skin. Reserve the scooped out potato flesh for another use.
- Step 3: Increase the oven temperature to 450°F. Place the hollowed-out potato skins on a baking sheet. Sprinkle the inside of each skin with shredded cheddar cheese. Top with crumbled bacon and chopped green onions.
- Step 4: Return the filled potato skins to the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly. Serve hot.
