Ingredients:

Carrots 2

Cabbage 1/2 head
Beef or vegetable broth 4 cups
Vinegar 2 tbsp
Salt 1 tsp

Cooking Instructions:

  • Step 1: Peel and grate the beets, carrots, and onions. In a large pot, sauté the onions in oil until translucent. Add the grated beets and carrots and cook for about 10 minutes.
  • Step 2: Chop the potatoes and cabbage into small pieces. Add them to the pot along with the broth. Bring to a boil, then reduce the heat and simmer for about 20 minutes, or until the vegetables are tender.
  • Step 3: Stir in the vinegar, salt, and black pepper. Cook for an additional 5 minutes.
  • Step 4: Serve the borscht hot, garnished with a dollop of sour cream. Enjoy with crusty bread.
